Carrot and Pineapple Muffins

Baked some healthy-ish muffins. I used wholemeal flour and half the amount of sugar the recipe called for. I don’t believe there’s any difference in taste when using wholemeal flour so why not. I love the sweet aroma that fills the house when you’re baking something sweet and delicious.

Pineapple and carrot wholemeal muffins:
1 1/2 cups Wholemeal flour
1 cup 1/2 cup of sugar
1 tsp Baking powder
1 tsp Baking soda
1 tsp Cinnamon
1/2 tsp Salt
1 cup Grated Carrot
1/2 cup Vegetable Oil
1/2 cup crushed Pineapple
2 Eggs – lightly beaten

1. Preheat oven at 175 degrees
2. Line muffin tins with paper cups
3. Mix dry ingredients
4. Mix wet ingredients
5. Pour wet into dry mixture – blend well
6. Spoon and bake for 25-30mins

Serve hot with butter and coffee!

Wholemeal Pasta

Ordered a Carbonara Pasta for a work lunch the other day and I was highly disappointed. It was very bland and runny – when a carbonara should be thick and sticky. It was definitely nothing like this – the best carbonara I have tasted to date.

I figured I could do a much better job at home myself:

I used wholemeal spaghetti although I much prefer fettucine or linguine (Woolies didn’t stock them in wholemeal). I guess the texture isn’t as soft as white pasta, but that doesn’t bother me. I’ve gotten used to eating only wholemeal/wholegrain foods. I wont eat bread unless it’s wholemeal and wholegrain. This is definitely my boyfriend’s fault.

Perfect day for a Picnic

Sandwiches on the menu: Tomato onion tuna and cucumber, cucumber french onion mayonnaise, turkey and cranberry, pastrami with cheese and chives, ham tomato and cheese.


I LOVE capsicum dips. It tastes just like pizza!
